What reports should I use for payroll?

You can use either the "Employee Details" report or the "Employee Daily Summary" report and select your pay period's start and end dates. 

Employee Details:
This report returns details of every shift worked during the pay period with an option to have a sub-total for each employee.

Employee Daily Summary:
You can run this report for either a one-week or a two-week pay period and it returns the total hours worked each day by each employee.
